Pumpkin and Potato Gnocchi

Cook time : 10 minutes
Ingredients
- 15 oz can pumpkin puree
- 3 russet potatoes
- 2 1/2 cups of flour (I used whole wheat flour)
- 2 tbsp olive oil
- 1 tsp salt
Instructions
Cook the russet potatoes in salted water, peel then mash while hot
Add the cooked mashed potatoes to a large bowl, spreading them to release their steam
Add the pumpkin puree and mix together with a fork
Add the flour, salt and olive oil and mix
Place the dough onto a well floured countertop and knead until the dough is uniform in texture.
Separate the dough into equal parts
Roll the dough into a rope (about ½" to ¾" long) and cut off small pieces with a sharp knife
Roll the dough onto a gnocchi board or the back of a fork, then place on a flour dusted board.
Voilà !
Enjoy in a warm soup or with a sage olive oil butter sauce and some parmesan cheese !
